When the temperature drops, so does the appetite for anything light and fleeting. Diners want warmth, depth, and a reason to linger — and operators who can translate that craving into a menu move win the season. Kindling, the downtown Chicago concept from award-winning Chef Jonathon Sawyer, is betting on exactly that with a refreshed fall menu that marries earthy, warming flavors with unexpected global influences.

The result is a lineup that reads like a masterclass in seasonal menu strategy: raw-bar precision, hearty cold-weather plates, and a bar program built to match.

    Truffle, Hamachi and a Peru

Kindling’s new small plates lean into luxe-but-grounded flavor combinations. The headliners:

    • Saku Gold Tuna with crispy sushi rice, black truffle and truffle aioli.
    • Hamachi with avocado, aji amarillo mayo and Peruvian causa.
    • Miso-Glazed Bay Scallop with Okinawa sweet potato purée and hollandaise.

The through-line here is cross-cultural layering — Japanese technique meeting Perunu from feeling predictable

    Heartier Plates Take Center Stage

As the season turns, Kindling pivots to the kind of substantial, comfort-forward dishes that define fall dining.

The Curried Squash Pasta pairs roasted kabocha squash and yellow Thai curry with chewy Korean rice cake noodles, toasted pepitas, brown butter and sage — a dish that quietly nods to the plant-forward, globally inflected direction so much of the industry is moving toward.

From Kindling’s Parisian rotisserie comes the Brine + Herb-Marinated Amish Farm Chicken, served with butternut squash, grilled grapes and rosemary chicken jus. And the Oven-Roasted Turkey Sandwich gets a cold-weather upgrade with cinnamon-honey brie and cabbage slaw on Kindling’s nostalgic 1979 Pullman loaf — plus more across the menu.

A Seasonal Cocktail Program to Match

The fall refresh extends to the bar, where new cocktails lean into warming, autumnal flavor profiles:

    • The Ogden — vodka, spiced liqueur and sparkling cranberry.
    • Plum & Peril — mezcal, chili-infused plum and Sfumato.
    • Shadow Play — banana-infused dark rum, Meletti and lemon.

Kindling has also rolled out new non-alcoholic offerings for every palette — a smart acknowledgment that zero-proof is no longer a niche courtesy but a core part of a complete beverage program.

    Why It Matters

For restaurant operators and beverage directors, Kindling’s refresh is a tidy case study in how to execute a seasonal menu change that actually drives traffic and check averages.

    • Seasonality sells urgency. Limited, fall-specific dishes give guests a reason to return now rather than later — and give marketing teams a timely story to tell.
    • Global flavor layering adds perceived value. Pairing kabocha with Thai curry and Korean rice cakes, or tuna with black truffle, lets a kitchen command a premium without exotic cost structures.
    • Zero-proof is table stakes. Building non-alcoholic options alongside the cocktail list captures the growing sober-curious and designated-driver spend that too many bar programs still leave on the table.

The practical takeaway: a focused seasonal rotation — anchored by a signature format like Kindling’s Parisian rotisserie or its 1979 Pullman loaf — keeps a concept feeling fresh while reinforcing what makes it recognizable.

Reservations at Kindling can be made on OpenTable.
